摘要
灌浆期高温胁迫是导致小麦产量降低和品质变劣的主要生态因子之一,严重影响小麦生产的稳定性。本文综述了生育后期高温胁迫对小麦籽粒蛋白质数量和质量、淀粉含量和组成的影响以及导致品质变异的遗传、生理生化和分子生物学方面的最新研究进展。加深小麦品质变异分子机理的研究将有助于培育品质稳定的品种,提高对品质稳定性的控制能力。
Wheat grain yield and quality were strongly influenced by heat stress during grain filling stage. The effects of high temperature on kernel gluten protein and starch accumulation, and associated molecular mechanisms were reviewed in this paper. High temperature leaded to specific gene expression, which resulted in gluten and starch quality variation. The molecular biology would provide an effective tool to understand the mechanism of quality variation.
