摘要
啤酒中的多酚物质对啤酒质量有重大的影响,本文就啤酒中多酚物质的来源及其对啤酒非生物稳定性和风味稳定的影响进行了一些探讨。
Polyphenols were important for the qulitity of beer. In this article we summarized the source of polyphenols and its influence to the no - biological stability and flavor stabihy of beer.
