摘要
从总抗氧化力、抗脂质过氧化能力及对·OH、DPPH·和ABTS+自由基的清除能力方面,综合考察桑椹色素的体外抗氧化活性.体外试验表明桑椹色素提取液对脂质过氧化有一定的抑制作用;对·OH、DPPH·和ABTS+均有不同程度的清除效果,且抗氧化能力呈现浓度效应.以花色苷浓度表示,桑椹色素提取液对以上4个体系的半抑制浓度IC50分别为18.56、77.62、35.91和109.33mg·L-1.桑椹色素提取液在这些体系中均表现出较强的抗氧化能力,表明桑椹色素提取物是一种优良的天然抗氧化剂和自由基清除剂.
Antioxidant activities of mulberry pigment were evaluated by determining the total antioxidant capacity, inhibitory effect of lipid per-oxidation, as well as scavenging effects to . OH, DPPH. and ABTS^+ , which generated by different systems. The results showed that mulberry red pigment extract had strong antioxidant activities on inhibiting to lipid per-oxidation, and scavenging to . OH, DPPH. and ABTS+. The half inhibitory content (IC50) expressed by anthocyanin was 18.56, 77.62, 35.91 and 109.33mg·L^-1, respectively, in these four systems. The overall results suggest that the mulberry extract would be an excellent natural antioxidant and free radical scavenger.
