摘要
蔬菜是人们生活中重要的植物性食品,其营养价值与营养成分的含量密切相关.氮和钾是蔬菜生长的营养限制因子,二者合理施用能促进蔬菜的生长,提高产量,改善蔬菜的营养品质.本文论述了氮肥、钾肥对蔬菜营养品质(维生素C、糖分、氨基酸)的影响,探讨了氮和钾的交互作用及其对蔬菜营养品质成分的效应,以期为氮肥、钾肥的合理施用和蔬菜的优质高产提供依据.
Vegetable is the indispensable foodstuff in our daily life and there is an obviously correlation between nutrient quality and nutnent eomponent of cegetable.The notrient limiting factors for vegetable growth was N and K. The proper use of them was beneficial to promote its growth, yield and nutrient quality. This paper mainl) reviewed the effect of N, K fertilizer on nutrient quality (Vitamin C, Sugar, Amino acid) of vegetable, and discussed the interaction between N and K and their effect on vegetable nutrient quality in order to produce high yield and fine quality of vegetable and right use N and K fertilizer.
