山地小气候对葡萄与葡萄酒的影响 被引量:15

The effect of microclimate of hilly vineyard on grape and wine quality

摘要 研究了陕西渭北高原的山地(海拔1152m,1096m)和平地(海拔818m)酿酒葡萄园的温度、相对湿度、日照时数和降雨量等小气候因子,调查了各试验点葡萄物候期、产量因素、植株生长量等生长特点,并经单酿试验对葡萄酒进行了成分分析及感官鉴定。结果表明,温度、≥10℃活动积温均为平地高于山地。山地随海拔的升高而递减。相对湿度5~8月呈递增趋势,之后有所下降,各点差异不明显。海拔最低的平地葡萄园总日照时数最少,海拔较低的山地葡萄园则最高。总降雨量山地大于平地,在山地上随海拔的升高而递增。平地的物候期较早,单株产量较高。植株生长量和果实糖酸比,平地葡萄园大于山地,在山地上随海拔升高而降低,单宁含量山地高于平地。山地葡萄酒感官质量显著优于平地,而山地上又以海拔较低处的质量优于海拔较高处。 Several microclimatic factors including temperature, relative humidity, sunshine hours and precipitation were investigated in two hilly vineyards (test site A,altitude 1 152 m, test site B,altitude 1 096 m) and one flat vineyard (test site C,altitude 818 m) in Weibei upland of Shaanxi province. Vine growth and development indices ,such as phenophase ,output factors and vine growth increment were investigated. Wines were made from the grapes of the three vineyards, and its ingredients and sensory quality were also analyzed and identified respectively. The results showed that air temperature and active accumulated temperature (≥10 ℃) of flat vineyard were greater than that of the hilly vineyards,and the hillside temperature decreased with altitude elevation, but the change regulation of precipitation was contrary to that of the temperature. There was not significant difference in air relative humidity between different test vineyards. The vineyards of test site B and test site C have the longest and the shortest sunshine hours respectively;Vine growth increment and sugar acid ratio of hilly vineyards were greater than that of flat vineyard ;Tannin contents of grapes in test site B vineyard was the highest. The wine quality of hilly vineyard was apparently better than that of flat vineyard,and lower altitude on hillside was beneficial to the wine quality.
