摘要 本文通过对秦川牛在不同立地条件下生长发育及肉用生产性能的比较研究,得出如下结论:秦川牛在陕西关中、陕北、陕南、西北、西南、东北6个地区的繁殖和发病情况无大的差异,说明秦川牛在这些地区有良好的适应性,秦川牛的生长性能(体尺指标)在原产地陕西关中地区明显优于其它非原产地地区。陕西关中地区30月龄秦川牛的宰前活重、胴体重、肌肉重,屠宰率、净肉率、肉骨比分别迭到481.67kg、250.83kg、227.31kg、54.159,6、48.61%和8.51:1,均极显著高于其它地区,大理石花纹等级仍以陕西关中地区秦川牛肉为最优,评分等级为3级,其它地区为5-6级;秦川牛公牛屠宰性能指标优于母牛,陕西关中地区秦川牛眼肌面积达到74.33cm2,极显著的高于其它地区;秦川牛牛肉的干将质含量在30.039,6~32.69%之间,陕西关中地区显著高于其它地区,粗蛋白含量在21.66%~24.25%之间,陕西关中和辽宁显著高于其它地区;粗脂肪含量在5.689,6~6.42%之间,陕西关中、贵州和甘肃秦川牛肌肉间脂肪含量显著高于其它地区。各地之间的粗灰分和钾、钠、钙、锌、铁、锰等矿物元素含量基本一致(P〉0.05);不同地区秦川牛胴体脂肪酸含量不尽相同。不饱和脂肪酸和必需脂肪酸含量陕西关中和甘肃的秦川牛肉极显著地高于陕北、贵州和辽宁地区(P〈0.01);而饱和脂肪酸的含量变化正好相反;不同地方的秦川牛的各种氨基酸含量基本一致,同种氨基酸在不同地区秦川牛间差异不显著(P〉0.05)。 The growth and the capability of beef performance of Qinchuan cattle in different region have been studied,in this paperx and the results showed that the reproductiion and the incidence of disease of Qinchuan ca-ttle in Guanzhong Shaanxi, northern Shaanxi, southern Shaanxi, northwest China, southwest China, and northeast China were not different largely, so it indicated that Qinchuan cattle could acclimatize themselves to these region well. The growth capability(index of length of body) of Qinchuan cattle in Guanzhong Shaanxi where is the original producing area of Qinchuan Cattle was better than that in other regions obviously. Live weigth, carcass weight, muscle weight, percentage of psteers, net meat percentage, and meat-bone ratio of Qinchuan cattle of 30 months old in Guanzhong Shaanxi were 481. 67kg, 250.83kg, 227.31kg, 54. 15%, 48.61% and 8.51:1 respectively, and larger than that in other regions. Marbling level of Qinchuan cattle' beef in Guanzhong Shaanxi was 3, which Was higher than that in any other regions where the level was 5 to 6. In Qinchuan cattle, the capability of beef performance of bulls were better than cows. Ribeye area of Qinchuan cattle in Guanzhong Shaanxi was 74. 33cm^2 , better than that in other regions remarkably. The content of dry matter of Qinchuan cattle's beef was 30. 03% 32.69%, and the highest was in Guanzhong Shaanxi. The content of crude protein of Qinchuan cattl'beef was 21.66 %-24.25%, and the highest was in Guanzhong Shaanxi and Liaoning. The content of crude fat of Qinchuan cattle'beef was 5.68%-6.42%, and the content of adipose between muscles of the beef of Qinchuan cattle in Guanzhong Shaanxi, Guizhou and Gansu was the highest. The content of crude ash and salt element such as K, Na, Ca, Zn, Fe, Mn in Qinchuan Cattle's beef in defferent regions were identical ( P 〉 0.05 ), The content of fatty acid in carcass of Qinchuan cattle in different region were not all the same.
