摘要
通过对窖泥、大曲、米曲、黑曲及红曲中微生物的分离、筛选,获得两株己酸乙酯合成能力较强的菌株,经初步鉴定,都归于曲霉属.两菌株均在30℃、pH为5的皮培养基中培养60h后产酶最高;Mm—4菌株的酯化酶在适宜条件下(2%乙醇和0.25%的己酸作底物,pH为4.0,30℃)酶活力可达220u/g.
Two strains of Aspergillus with higher esterifying enzyme activity were isolated from pit earth and fermenting agent bricks. When they were cultivated in bran medium of initial pH 5. 0 for 60 hours at 30℃,enzyme productions reached their highest. As for the esterifying enzyme of Mm-4 strain,at the optimum conditions (2% alcohol and 0. 25% caproic acid,pH 4. 0,30℃ ),enzyme activity reached its highest of 220 u/g.
