摘要
以新疆地产胡萝卜为原料,考察了稳定剂、沉淀剂和不同溶剂对β-胡萝卜素提取的影响。实验结果表明,当在胡萝卜汁中提取β-胡萝卜素时,加入氨水/乙醇作稳定剂,提取率可提高近2倍;加入2%CaCl2·2H2O作沉淀剂时,β-胡萝卜素的提取量可高达188mg/100g;以石油醚作为提取溶剂时,所得β-胡萝卜素提取率最高。本实验工艺可为新疆胡萝卜实现深加工提供有力参考。
Xinjiang carrots were used as the raw materials for β-carotene extraction. Factors effecting the β-carotene extraction were studied, such as stablizing solution, precipitating agent, and different solvents. The results showed that when the mixture of ammonia and ethanol were added into the carrot juice as stablizing solution, the yield of β-carotene could be improved by about two times;when the concentration of CaCl2·2H2O was 2%, the content of β-carotene reached 188mg/100g;when the extraction solvent was petroleum, the yield of β-carotene was higher than those with other solvents.
