苦瓜籽中脂肪酸成分分析 被引量:11

摘要 将-80℃的苦瓜籽仁迅速粉碎,用甲醇和氯仿提取脂类,并将提取出的脂肪碱法甲基化,通过TLC来分离纯化甲基酯,用100m×0.25mm的GC毛细管柱来测定脂类中脂肪酸的组成。结果表明:苦瓜籽仁含有25种脂肪酸,其中MUFA为主要成分,占总脂肪酸的61.209%。MUFA中脂肪酸24:1n9含量最高,占51.220%。其次是油酸,占9.646%。SFA和PUFA的含量相当,分别为19.228%和19.563%。PU-FA主要是亚油酸,占13.416%。苦瓜籽中含有多种共轭亚油酸的异构体,共轭亚油酸占3.870%。苦瓜籽中11t-18:1含有0.460%,在人体内可能是9c,11t-CLA的前体。共轭亚油酸可能是苦瓜籽调节免疫、抗癌、抗动脉粥样硬化等作用的功能成分之一。 The lipid were extracted by using methanol and chloroform after comminuting the seeds of bitter melon freezing at -80℃, and methylated by base-catalyzed methylation. Methylated lipids were purified by Thin Layer Chromatogram (TLC) and determined by GC equipped with 100m×0.25mm capillary column. The results indicated that the lipids were composed of 25 fatty acids among which the main component MUFA was 61.209% in which 24:1n9 was the highest one with 51.220%. The second highest oleic acid was 9.646%. The amount of SFA and PUFA was almost the same, 19.228% and 19.563% respectively. The main PUFA was linoleic acid, 13.416%. There were many kinds of CLA isomers that accounted for 3.870%. And 0.460% trans-18:1 were existed in bitter melon seeds which might be precursor of 9c,11t-CLA in human. In bitter melon seeds, CLA may be one of the functional components related to the function of anticancer, anti-atherogenesis, antibacterial, anti-virus or regulation of immunity.
