生物加工改进羽毛角蛋白营养价值的研究进展 被引量:3

摘要 羽毛角蛋白是一类有待开发的非常规蛋白质资源。文章从降解角蛋白的微生物种类,降解机制,角蛋白酶的性质,羽毛的生物加工途径以及生物加工在改进羽毛角蛋白营养价值中的应用等方面论述了这一领域的研究进展。
