摘要
用果胶酶对沙棘果汁澄清的单因素试验结果表明,果胶酶处理沙棘果浆,可明显提高沙棘的出汁率及汁的透光率,利于果汁的澄清。用此工艺条件澄清的沙棘果汁透光率达84.7%,出汁率达63.9%,可溶性固形物含量基本不变。果胶酶的使用参数:浓度4g/l左右,pH为3~4,温度45℃~50℃,作用时间4h。
The individual factor of seabuckthorn fruit juice clarification by pectinsae was studied. The results showed that pectinase could raise juice yieid and inhance transmittanty obviousely. The transmittance of clarified seabuckthorn fruit juice treated was 84.7%, and the juice yield was 63. 9%. The soluble solid content did not mainly change. The optimum factors of the pectinase in seabuckthorn were 4g/l and pH3-4 at 45℃-55℃ for 4h.
