摘要
以木薯淀粉为原料,用己二酸二乙烯酯做交联剂,醋酸乙烯酯做酯化剂制备了交联醋酸酯淀粉;确定了最佳反应条件;并测定了产物糊化温度、粘度、冻融稳定性等特性。结果表明,经过交联酯化的淀粉具有较高粘度和冻融稳定性。
The esterified and cross- linked cassava starch is synthesized with cassava starch as starting material and vinyl hexanediacetate as cross -linking agent, and its properties are investigated. The optimum reaction conditions of the esterification of the starch are obtained. The temperature gelatinzation, viscosity and stability of frozen and melt of the product are determined. The results show that the product has high viscosity and stability of frozen and melt.
