摘要 酶来源于自然界,是生物体内时时刻刻快速而高效进行着的千百种生化反应的天然催化剂。酶的自然来源有动物、植物和微生物三大类。目前用于大规模工业化生产的酶制剂是用微生物发酵生产出来的。 Enzyme applications in cereal food is not a new concept, people have been aware that the use of enzyme products in dough can promote yeast fermentation and improve gluten network for a long time. In recent years continuously developed new products and technologies of enzyme preparations further expand its use in the dough. Enzyme technology applying in many traditional food processing industries are growing concerns, including animal and plant protein in the deep processing of raw materials, dairy products, condiments and baby food. Enzyme technology as a new food processing methods and means being combined with the Chinese characteristics of the local market in the food industry would have more fields discovered and new applications.
