摘要
在实验室条件下进行了生姜对几种食用植物油抗氧化效果实验,结果表明:生姜对食用植物油具有较好的抗氧化效果,添加1.0%的生姜能基本上稳定储油的品质而不酸败;且生姜无毒,取材容易,方法简便,适合家庭储油保质的有效方法。
The antioxidant effect of ginger on edible vegetable oil was tested in lab to find an efficient method to prevent edible vegetable oil from oxidation and acidification. The results showed that ginger had good antioxidant effect on edible vegetable oil. 1.0 96 dosage of ginger can maintain quality of the oil against acidification; ginger has the advantages of no toxic, easy taking and simple operation, it is a good method for city and country people in oil storoge.
