摘要 大量的研究发现,氯化钙处理可以改善肉的嫩度。本文就氯化钙处理对肉嫩化的应用和机理研究进展情况作一综述。 Plenty researches show that calcium chloride treatment can improve muscle tenderness. This review elucidated the progress on the application and mechanism of calcium chloride treatment to tenderize muscle.
