丙酮酸盐具有很好的减肥功效,介绍了丙酮酸盐的物化性质、生理功效,并对它在功能性食品中的应用作了简要的概述和展望。
Pyruvate has an excellent effect of losing weight. The physi-chemical properties and physiological efficiency of pyruvate were reviewed in this paper, followed by a brief description of its application in functional foods. The application prospect was also discussed.
