摘要
以苹果渣为原料,探讨了用盐析法提取果胶的工艺条件,分别采用5种不同的盐作为果胶沉淀剂,通过实验,对比筛选沉淀剂的量、pH值、反应温度及反应时间等影响因素,得到提取果胶的最佳工艺条件。
In the paper, the precipitation conditions of pectin extracting from apple residue by salting were discussed. In the experiments, five types of salts were used to study the pectin precipitation. Meanwhile, by studying on the factors such as salt amount, pH value, temperature, and precipitation time, the optimal precipitation is obtained of extracting pectin.
