摘要
红子果实的肉质果壁是由托附杯借细胞体积增大发育而来。成熟果壁细胞不含有淀粉粒,但具有大量单宁细胞。速冻果果壁细胞间隙和细胞内有许多小冰晶体,细胞受损害小。缓冻果的胞间冰晶体大而数量少,细胞受损程度大。
The succulent fruit wall of Pyracantha develops from the hypanthium mainly by cell enlargement; All cells of fruit wall do not contain starch grain, but a great number of cells contain tannin during fruit maturity. In the state of freezing storage, quick freezing brings about the intercellular and endocellular of the fruit wall quite a number of ice crystals of smaller size that do no harm to the cells, while slow freezing brings about the intercellular only a few number of ice crystals of larger size that are harmful to the cells.
