摘要
用鼠伤寒沙门氏菌/微粒体试验方法研究了两种茶叶对N-亚硝胺合成的阻断作用。在模拟人胃液的条件下,亚硝酸钠与二甲基胺发生亚硝化反应生成N-亚硝胺。亚硝胺在Ames平板掺入法中能引起鼠伤寒沙门氏菌TA98,TA100的致突变作用。当加入1%、5%和10%剂量的茶叶浸出液后,可阻断N-亚硝胺的合成,抑制突变率呈剂量-反应关系。
Blocking action of two kinds of teas on formation of nitrosamines in vitro were studied by Salmonella typhimurium/microsome assay. Nitrosamines were formed through reaction between sodium nitrite and dimethylamine in the imitating condition of human gastric juice. Nitrosamines could induce the mutation effect in Salmonella typhimurium TA98 and TA100 by Ames test. The formation of N-nitrosamine could be blocked, when 1%, 5% and 10% tea water extracts were added, inhibiting rates of mutation showed dose-reaction relationships.
