摘要
采用正交设计试验方法,三偏磷酸钠和磷酰氯为交联剂,研制磷酸二酯交联淀粉,获得最佳工艺条件,可以工业化生产。水解物用作果冻胶凝剂和豆乳增稠穗定剂,试验表明凝胶剂强度强,稳定性好,使用简便,是易分散于冷水的速溶凝胶淀粉。
Phosphate di-starch is prepared by using sodium trimetaphosphate and phosphorus oxychloride as crosslinking agent. The optimum conditions for preparation are determined dy orthogonal experiment and the method of preparation can be used in industrial process. The experiments have shown that its hydrolyzate has good gelling strength and stability when used as the gelatinizing agents of juily and bean milk. This hydorlyzate is a kind of quick-solubling gelatinized starch which is easy to operate and dispersible in cold water.
