The introduction of new industry rules means China's booming chicken essence industry is facing a major reshuffle. The new Chicken Essence and Condiment Industrial Criteria, drawn up by China Association of Condiment (CAC) and put into effect on July 1, is expected to clear out unqualified firms from the industry, said CAC President Wei Xiangyun. The new criteria give an official definition of chicken powder, stipulates that total nitrogen contents of chicken essence must not be lower than 3 per cent, and clarifies sanitation criteria for the product.
