摘要
纯生啤酒生产的关键是纯种酿造和后期对微生物污染的有效控制。对此必须对生产工艺、设备、人员及生产环境等各方面严格把关、严格控制。主要控制有:添加酵母过程微生物污染、原料微生物污染、酿造设备及仪器微生物污染的控制;后期过滤过程的微生物污染的控制;清酒的微生物控制;灌装车间的洗瓶机、验瓶机、灌装封盖机、瓶装输送线的微生物控制等。(孙悟)
The key in the production of pure draft beer was beer brewing of pure species and effective control of microbial contamina-tion in late brewing stage.Accordingly,strict management of production techniques,facilities,workmen and production environment must be done carefully.Microbial contamination in barm addition process,microbial contamination of raw materials,and microbial contamina-tion of brewing equipments and apparatus must be under effective control.Besides,microbial contamination in late filtration stage,mi-crobial contamination in untreated beer,and microbial contamination of bottle washing machine,bottle examining machine,filling ma-chine,head closure machine,and bottle delivery machine should be also under control.(Tran.by YUE Yang)
