摘要
本文提出了在家用生活电器炊煮性能试验中食品感官评价方法的应用。阐述了食品感官评价方法的应用前提、评价体系建立的一般流程和技术发展的要求。并以电饭煲和微波炉产品为例,详细介绍了在不同产品在炊煮性能试验中食品感官评价指标体系内容及应用特点。
Systematic method of food sensory evaluation was focused on applying in the cooking performance test of household electrical appliances. Prerequisite for its use and the general establishment process were stated. In addition, the new requirement from the technology development of the industry was also indicated. By taking the rice cooker and the microwave oven for example, it was illustrated that the details and the characteristic of food sensory evaluation system in various household electrical products were different.
