摘要
试验分析了樱桃番茄(Lycopersicon esculentum Mill.var.cerasiforme Alef.)果实在成熟过程中色素积累与生理指标的相关程度。结果表明,色素与还原糖、维生素C含量及过氧化氢酶、过氧化物酶、超氧化物歧化酶、多酚氧化酶活性的变化趋势一致,其中与维生素C含量、多酚氧化酶活性的相关程度最紧密。还原糖含量的增加为色素等的合成提供原料,维生素C含量及过氧化氢酶、过氧化物酶、超氧化物歧化酶、多酚氧化酶活性的提高有利于增强色素的稳定性及果实的抗性。
Correlation degree of pigment accumulation and physiological indexes in the maturation process of cherry-tomato(Lycopersicon esculentum Mill. var. cerasiforme Alef.) fruit was analyzed. The results showed that the changing trend of pigment content and reducing sugar and vitamin C content, activity of CAT(Catalase),POD(Peroxidase), SOD(Superoxide dismutase) and PPO(Polyphenol oxidase) was consistent, among which the correlation coefficient of vitamin C content and PPO activity was high. Increase of reducing sugar content provided materials for the synthesis of pigments; while rising of vitamin C content,CAT,POD,SOD and PPO activity was beneficial for improving stability of pigment as well as resistance of fruit.
