摘要
由于大豆异黄酮是醇溶性物质,因此在提取醇法大豆浓缩蛋白时,不可避免地将大豆异黄酮提取出来,在保证醇法大豆浓缩蛋白产品质量和产率基础上,考查大豆异黄酮含量的变化情况。通过单因素和正交试验确定醇法大豆浓缩蛋白的最佳生产工艺条件为料液比为1∶5、乙醇浓度65%、萃取温度50℃、萃取时间2 h、2倍量淋洗,可得到醇法大豆浓缩蛋白产品(蛋白质含量大于70%,得率大于68%),同时得到萃取液中大豆异黄酮的含量变化规律,为同时提取两种大豆功能性因子提供了有价值的数据。
Because soybean isoflavones are alcohol-soluble substance,and in the process of leaching soybean protein concentrate by alcohol,the soybean isoflavones are extracted in the same time.In order to ensure the product quality and yield on soybean protein concentrate,we examine the content changes of soybean isoflavones.We can determine the best technology conditions by single factor and orthogonal experimental method,as follows,solid-liquid ratio is 1:5,ethanol thickness is 65%,extraction temperature is 50 ℃,extraction time is 2 h.With this the best technology conditions,we obtain soybean protein concentrate(protein content more than 70%,yield more than 68%),meanwhile,obtain the content changes rule of soybean isoflavones.Those provide valuable data on extracting the two kinds of soybean functional at the same time.
