摘要
本文对以啤酒生产副产物麦糟和废酵母为原料,以沪酿3.042为菌种,采用低盐固态发酵方法酿造酱油工艺进行了研究,为啤酒生产副产物综合利用提供了新的方法。
The technique of brewing soy from mess grain and dreg autolysate, the byproducts of producing beer, which used Aspergills aryzare as fermented strains by low-salt solid fermentation way, was studied. That gives a new way to use the byproducts of producing beer synthetically.
