摘要
采用同时蒸馏萃取法(SDE)和固相微萃取法研究了酿酒用糠壳中产生糠味物质的化学本质及其来源,其中发现trans-1,10-Dimethyl-trans-9-decalol,译为土臭素,占0.201%。通过感官评定、保留时间定性、双柱定性、标准品的添加等方法确认并鉴定糠壳中产生糠味的特征物质,其质谱解析相似度达97%。从而为控制糠味的产生及对糠壳前处理工艺提供坚实的理论基础。
In this study, simultaneous distillation & extraction (SDE) and solid phase micro extraction method were adopted to study the chemical nature and the source of earthy-musty substances in liquor-making bran. Among all the substances, trans-1,10-Dimethyl-trans-9-decalol, also named geosmin, accounted for 0.201%. Through sensory evaluation, retention time, qualitative double column, and the addition of standard products etc., the characteristic substances producing earthy-musty smell were determined and identified with their mass spectrum analytic sim- ilarity up to 97 %. This study provided theoretical base for the control of earthy-musty substances and the improvement of pretreatment technology of bran.
