高压杀菌技术是世界食品加工业中的一项高新技术。对食品高压处理技术的产生、发展,高压对病原微生物的影响及食品高压处理技术的应用前景、存在的问题及研究开发的课题作了综述。
The extra high pressure treatment is a new advanced technology in the world's food processing industry. In the paper, the development of the technology and its effect on pathogens are introduced. And the prospects, existing problems and researches concerned with the use of the technology in the food industry are reviewed.
