摘要
目的探讨餐饮业餐具消毒工作中存在的主要问题和管理对策。方法随机抽取各县(市)区所辖餐饮企业共210户,每户抽查8件餐具对其消毒效果进行检验,采用专用的大肠菌群快速检验纸片法。同时,检查消毒管理制度,消毒人员配置,消毒设施等。结果在调查的210家餐饮单位中,有消毒管理制度的占58.57%;有消毒员的占52.86%;有专用消毒设施的占78.10%,餐餐都消毒的占30.00%,餐具消毒总合格率为65.24%,大、中、小餐饮单位调查的餐具消毒合格率分别为80.00%、74.29%和41.43%,其差别有显著性。结论辽阳市餐饮行业,特别是中、小型餐饮单位,餐具消毒管理制度不够健全,餐具消毒设施落后,餐具消毒合格率偏低。因此,应加强对餐饮业餐具消毒工作的监督管理,特别是要加强中、小型餐饮单位餐具消毒工作的监督管理。
OBJECTIVE To analyze the key problems of tableware disinfections of restaurants and hotels,study the next move management the counterplan and the emphasis in the fellow work.METHODS We checked 210 erstaurants and hotels together,these restaurants are from every areas of Liao yang City.We check 8 cutleries from every hotel,and examinate their disinfect result.Meantime,check their disinfect facilities,disinfect personnel,disinfect number of time,cutlery storage facilities and disinfect the result etc.RESULTS Among 210 the meal and drinking business,58.57%of them have disinfection management system,52.86%of them have disinfection personnel,78.10%of them have disinfection facilities,the cutlery disinfect total qualified rate is 65.24%.It was 80%that the dishwares qualified rates of coliform bacteria of big hotels,and the medium size hotels qualified rates is 74.29%,the small size hotels qualified rate is 41.43%.CONCLUSIONS It should be strengthened that the management and inspection on the disinfections of appliances,particularly,it should be strengthened that the management and inspection on the cutlery disinfection of method small shed restaurants.
