摘要
目的调查山东省食品企业相关人员减盐知识、态度和行为,为制定加工食品减盐政策提供依据。方法采用个人深入访谈方法,调查山东省7家食品生产企业的14名管理人员和研发人员。结果大多数食品企业具有较高的减盐知识,但企业对主动减盐的态度较为谨慎。企业在减盐上面临食品生产卫生标准的限制、低盐产品的定义尚不明确、低盐产品没有利润优势和低盐的社会氛围尚未形成等困难,更希望通过消费者市场去推动企业减盐。结论食品企业减盐应遵循市场规律,政府出台引导性政策和提高消费者低盐意识是促进企业减盐的关键。
OBJECTIVE To analyze the attitudes and behaviors about salt reduction of food enterprises in Shandong province. METHODS 14 managers and researchers were interviewed by key personal interview among 7 food production enterprises. RESULTS The vast majority of food companies had high salt reduction knowledge, but the companys' attitude towards salt reduction initiative were more cautious. Companies face restrictions on salt reduction in food production hygiene standards, definitions salt product is not yetclear, low-salt products were not profit advantage, salt had not yet formed a social atmosphere and other difficulties, but they alsohope that the consumer to promote enterprise reduce salt. CONCLUSIONS Salt reduction in food enterprises should follow the laws of the market, release policies and improve consumer awareness were the keys to promoting enterprise salt reduction.
