摘要
对不同节木代料香菇子实体蛋白质的营养价值进行了研究。结果表明 ,2种节木代料香菇子实体蛋白质的必需氨基酸含量与木屑代料香菇子实体蛋白质的必需氨基酸含量没有明显差异 ,且前者蛋白质的氨基酸系数分均高于后者 ,这说明节木代料香菇子实体蛋白质具有较高的营养价值。
The nutritional value of the protein in Lentinus edodes fruit bodies cultivated with different sawdust-saving substrates was studied.The results showed that the essential amino acid contents of L. edodes fruitbodies cultivated on sawdust-saving substrates and sawdust had no signifcant difference.The SRC in the former was higher than that of the latter.This suggested that L. edodes cultivated on sawdust-saving substrates was a kind of edible fungi with higher nutritional value.
