磷脂酶A_2水解大豆浓缩磷脂的研究(II)贫水相的水解及产品性能的测定 被引量:2

摘要 研究了磷脂酶A2 在水相 (贫水 )中水解大豆浓缩磷脂 ,经过正交试验得到最佳工艺条件 :浓缩磷脂和水比例 5∶2 ;加酶量 173.2IU/g浓缩磷脂 ;反应温度 6 5℃ ,钙离子浓度 0 .1mol/L。研究了溶血磷脂产品乳化性能 ,结果表明其HLB值大于 8,能很好的乳化O/W型体系。 The hydrolysis of lecithin in absent aqueous phase was studied,then the optimum conditions of reaction was investigated by the orthogonal experiment,which were the rate of substrate to water 5∶2,the rate of enzymic IU to substrate 173.2IU/g,reaction temperature 65℃and Ca 2+ concentration 0.1mol/L.In addition,the emulsion character of product was also examined.The results showed that the HLB value of product is over 8,and can emulsify the oil in water type phase well.
