摘要 肉制品作为人体蛋白质摄入的重要来源,其安全问题直接关系国计民生。近年来,低温食品冷链物流日趋受到大家的关注,有着很好的市场前景,但目前低温食品在冷链物流过程中存在着各种问题,进口鲜冻肉类产品安全就显得尤为重要。将进口鲜冻肉类产品在低温食品冷链物流过程中的食品安全风险作为研究对象,冷链物流过程中冷链市场开办者和冷冻食品经营者作为研究主体,分析存在的问题并对其进行风险评估,对保障进口鲜冻肉类产品质量安全提供参考。 As an important source of protein intake in human body,meat products are directly related to the national economy and the people?s livelihood.In recent years,low temperature food cold chain logistics has been attracting more and more attention,and has a good market prospect.However,there are various problems in the cold chain logistics process at present.The safety of imported frozen meat products is particularly important.This paper takes the imported fresh frozen meat food safety risk in low temperature food cold chain logistics in the process as the research object and the cold chain logistics market in the process of starting and frozen food operators as the research subject,analyzes the existing problems,assesses the risk and provides reference to guarantee the quality and safety of imported fresh frozen meat products.
