摘要
本文分析阐述了微波干燥原理、物料特性,通过实验及理论研究,分析了物料特性对微波干燥食品的影响;得出物料的初始含水率、物料形状、比热容与盐含量等对微波干燥影响有一定的相关性。
Microwave drying principles are told and material characteristics is briefly analyzed in the pa-per.Experiments are made to study the influence of material characteristics on microwave drying.It is obtained that initial water ratio,material figuration,specific heat and salt content are somewhat relative with microwave drying.
