摘要
苯乙醛是食品工业中常见的一种具有类似风信子香气的芳香族化合物,也是食品加工中产生的杂环胺代表物Ph IP的前体物之一,苯乙醛浓度与PhIP形成有正相关关系,利用苯乙醛与邻苯二胺衍生反应形成的衍生物具有紫外吸收的特性,开发一种能高效快速分析苯乙醛的高效液相色谱检测方法。
Phenylacetaldehyde is a kind of aromatic compound with hyacinth-like aroma commonly found in food industry.It is also one of the precursors of PhIP,a representative of heterocyclic amines produced in food processing.The content of phenylacetaldehyde is positive with the formation of PhIP.Correlation,the use of phenylacetaldehyde and o-phenylenediamine derivatives to form a derivative with UV absorption characteristics,a high-performance liquid chromatography method for the efficient and rapid analysis of phenylacetaldehyde is developed.
