摘要
以工业化的蛋白酶为原料 ,采用 3种不同的工艺 ,对提取猪皮胶原的生物酶法进行了研究。研究发现 :猪皮的酶水解产物分子呈不连续分布 ,主要集中在某些分子量处 ,与碱法工艺明胶分子量的分布明显不同 ;且酶处理条件不同 ,水解得率与产物分子量的分布也不同。
A kind of industrialized protease was used as raw material. Three kinds of different hydrolyzing technics of pigskin were introduced by protease. It could be concluded that hydrolyzed product of pigskin mainly concentrated in certain molecular weight by protease,which differed from industrial gelatin attained by base. And hydrolyzed proportion of pigskin and molecular weight distributing of its products were different in different reaction condition.
