摘要
为规范SPI的喷雾干燥加工工艺并提高其溶解能力,以低温豆粕为原料提取SPI,并进行喷雾干燥处理,通过测定其蛋白分散指数,并对实验数据进行Box-Behnken设计分析,明确喷雾干燥过程中物料浓度、物料p H以及进口温度对SPI溶解性的影响,得到当物料浓度为4.89%,物料p H为7.32,进口温度为154.86℃的条件下,SPI的溶解能力最强,达到86.19%。
In order to regulate SPI spray drying process and improve its solvency,SPI was sprayed drying extracted from low temperature soybean meal. With PDI as an index,the experimental data was analysed by Box-Behnken design,to clear the influence of the concentration of material,the material p H and the inlet temperature in spray drying process on solubility of SPI. Results show that when the condition is that material concentration of 4. 89%,material p H of 7. 32 and the inlet temperature of 154. 86℃,SPI solvency is the highest,reaching 86. 19%.
