摘要
我国古代冻类酒饮有三类 :一是指冰镇酒 ,体现的是酒的一种冷饮方式 ;二是指天寒时节酿造而成的酒 ;三是指在天寒时节酿造并经过冷冻处理的酒 ,体现的是一种酿酒工艺。“冻酒”得名之由属于第三类。冻酒是古代吐鲁番地区“冻葡萄酒”这种优质葡萄酒的简称和特称。同时 ,本文对冰镇酒和冻酒的产生时间、传播途径和发展以及“冻酒”
There were three types of frozen drink in ancient China.The first type was cooled wine which reflected a way of cold drink of wine.The second type referred to wine made in cold days.The third type referred to wine made not only in cold days but also by freezing methods,which reflected a wine-making technique.The third type explained why frozen wine got such a name .Frozen wine was the short and special form for the high quality frozen grape made in ancient Tulufan.In addition,this paper researches in the time when cooled wine and frozen wine came into being, how they became prevalent,their development and the reason why the name of frozen wine withered away.
