摘要
以五色米(粳米、糯米、黑米、小米、玉米)为原料,采用传统喂饭法工艺,进行边糖化、边酒精发酵、边蛋白质分解的三边发酵,研制成新型五色米养生红曲酒。
Taking colored rice( japonica rice,glutinous rice,black rice,millet,corn) as the raw materials,this paper used the traditional feeding process to carry out the trilateral fermentation with saccharification,alcoholic fermentation and protein degradation at the same time,and a new type of health colored rice red koji wine was developed.
