摘要
肇实产自广东肇庆,是一种药食兼用的植物,营养价值高,含有丰富的碳水化合物、蛋白质、氨基酸、维生素等营养成分,以及具有保健功能的活性成分,包括多酚类、类黄酮、不饱和脂肪酸和生育酚等,且富含钙、镁、钾、铜、锰、锌、铁等多种微量元素。本文综述了肇实的品种类型、营养成分、功效成分、微量元素及重金属元素含量等方面的研究进展,以期为肇实后续的深入研究和开发提供思路和参考。
Zhaoshi was a medicinal and edible plant from Zhaoqing, Guangdong Province. It has high nutritional value. It was rich in carbohydrates, proteins, amino acids, vitamins and other nutrients, as well as active ingredients with health functions, including polyphenols, flavonoids, unsaturated fatty acids and tocopherols. It was also rich in calcium, magnesium, potassium, copper, manganese, zinc, iron and other trace elements. In this paper, the research progress in variety types, nutritional components, functional components, trace elements and heavy metal elements was summarized in order to provide ideas and references for further research and development of zhaoshi.
