人工养殖拟鳄龟肌肉营养成分分析与评价

摘要 对两个人工养殖拟鳄龟群体的肌肉营养成分进行测定和分析,发现两个群体肌肉鲜样的粗蛋白含量分别为17.43%、18.57%,粗脂肪含量分别为0.67%、0.73%,水分含量分别为79.80%、79.23%,粗灰分含量分别为1.13%、1.10%,总糖含量分别为0.37%、0.30%,两个群体间肌肉常规营养成分差异均不显著(P>0.05)。两个群体共检测出16种氨基酸(7种必需氨基酸,2种半必需氨基酸,7种非必需氨基酸),总必需氨基酸含量为6.93%和7.50%,总非必需氨基酸含量为8.11%和8.74%,总呈味氨基酸含量为6.22%和6.70%。各氨基酸中,以谷氨酸含量最为丰富。根据FAO/WHO标准氨基酸评分,蛋氨酸+胱氨酸为第一限制氨基酸(组合),缬氨酸为第二限制氨基酸。两个拟鳄龟养殖群体的必需氨基酸指数分别为0.85和0.87。两个群体脂肪酸组成以多不饱和脂肪酸C18:2n6c为主,含量分别为84.63、105.30 mg/100 g;脂肪酸含量,除硬脂酸外(P<0.05),差异均不显著(P>0.05)。综合而言,拟鳄龟肌肉具有高蛋白、低脂肪、呈味氨基酸含量丰富的营养特点,可作为良好的食物蛋白质来源。 The muscle nutritional components of two artificially bred populations of Chelydra serpentina were measured and analyzed.The results showed that the crude protein content of fresh muscle samples from the two popula tions was 17.43%and 18.57%,respectively;the crude fat content was 0.67%and 0.73%,respectively;the moisture content was 79.80%and 79.23%,respectively;the crude ash content was 1.13%and 1.10%,respectively;the total sugar content was 0.37%and 0.30%,respectively.There were no significant differences in muscle routine nutritional components between the two populations(P>0.05).In the two populations of Chelydra serpentina,16 amino acids were detected,including 7 essential amino acids,2 semi-essential amino acids,and 7 non-essential amino acids.The total content of essential amino acids in the two populations was 6.93%and 7.50%,the total content of non-essential amino acids was 8.11%and 8.74%,and the total content of flavor amino acids was 6.22%and 6.70%.Among all the amino acids,glutamic acid was the most abundant.According to the standard amino acid score of FAO/WHO,methionine+cystine was the first limiting amino acids(combination),followed by valine.The essential amino acid index of the two popula-tions of Chelydra serpentina was 0.85 and 0.87.The fatty acid composition was dominated by polyunsaturated fatty acid C18:2n6c,with a content of 84.63 mg/100 g and 105.30 mg/100 g in the two populations;except for stearic acid(P<0.05),the fatty acid content of the two populations showed no significant differences(P>0.05).In summary,the muscle of Chelydra serpentina has nutritional characteristics of high protein content,low fat content,and abundant flavor amino acids,making it a high-quality source of food protein.
