摘要
茶多酚是一类大量存在于茶叶中的物质,因具有较强的抗氧化性、还原性,能够去除多种有机物、重金属污染物,因此被广泛应用于土壤、水体污染修复以及环境修复材料领域。多项研究表明,具有抗氧化性能的物质之间大多存在协同作用,两种或两种以上的物质化合,其抗氧化能力往往强于单一物质抗氧化的相加。近年来,许多研究者将目光聚焦于茶多酚与小分子物质结合所具有的协同抗氧化能力。本文以茶多酚与维生素C(Vc)为例,论述了茶多酚、Vc的抗氧化机理及其协同机制在环境领域的应用,最后提出对该领域未来研究的展望。
Tea polyphenols,a kind of substance in tea extract,have been widely considered by researchers for their strong antioxidant and reducibility.In many studies,a synergistic effect has been found in most substances with antioxidant properties.The antioxidant capacity of two or more substances is often more substantial than that of a single substance.In recent years,many researchers have focused on the synergistic antioxidant ability of tea polyphenols combined with small molecules.Taking tea polyphenols and vitamin C as examples,we reviewed their antioxidative mechanisms.The application of synergistic antioxidant activity in the environmental field was further discussed.Finally,the prospects for future research in this field were proposed.
