摘要
复热是人们热食菜肴的重要一环,其中,微波复热是人们日常生活中较为常见的一种复热方式。从微波复热在菜肴中的应用现状、微波复热工艺研究、微波复热对不同烹饪方法的菜肴品质的影响、微波复热效率和均匀性等几个方面阐述了菜肴微波复热技术现状,分析了微波复热存在的一些问题,并提出了一些建议,以期为微波复热技术研究和工业化发展提供参考。
Reheating is an important part of people’s hot food dishes,in which microwave reheating is a more common reheating method in people’s daily life.This paper describes the current status of microwave reheating technology in dishes from the application of microwave reheating in the current situation,microwave reheating process research,microwave reheating on the quality of different cooking methods of dish quality,microwave reheating efficiency and uniformity and other aspects of the current situation of microwave reheating technology,analyses the existence of microwave reheating some of the problems,and puts forward a number of recommendations,with a view to provide reference for the development of microwave reheating technology research and industrialisation.
