摘要
从来源于水产动物肠道的8株乳酸菌中筛选富硒活性较好的菌株,并对其抑菌能力、耐胆盐、抗氧化能力及Caco⁃2细胞的黏附性进行分析。结果表明:来源于花鲢鱼肠道的菌株ZHL⁃2的富硒率高达85.46%,经分子生物学鉴定为植物乳杆菌(Lactiplantibacillus plantarum)。与未富硒菌株ZHL⁃2相比,富硒后菌株ZHL⁃2完整细胞和破碎细胞提取物清除DPPH自由基和超氧阴离子的能力分别提高3.67%、3.67%、11.67%、11.00%。富硒后菌株ZHL⁃2胆盐耐受能力以及对Caco⁃2细胞的黏附数分别增加6.54%和7.34 CFU/个,对大肠杆菌及金黄色葡萄球菌的抑菌圈直径分别增加1.14 mm和2.89 mm。
Strains with better selenium⁃rich activity were selected from eight lactic acid bacteria(LAB)origi⁃nating from the intestinal tract of aquatic animals,and their antibacterial ability,bile salt resistance,antioxi⁃dant ability,and adhesion to Caco⁃2 cells were analyzed.The results showed that strain ZHL⁃2 from the intesti⁃nal tract of silver carp had a selenium⁃rich rate of 85.46%and was identified as Lactiplantibacillus plantarum by molecular biology.Compared with that of strain ZHL⁃2 without rich selenium,the scavenging ability of DPPH radical and superoxide anion of intact cells and cell⁃free extracts from selenium⁃rich strain ZHL⁃2 in⁃creased by 3.67%,3.67%,11.67%,and 11.00%,respectively.The bile salt resistance and adhesion to Caco⁃2 cells of selenium⁃rich strain ZHL⁃2 increased by 6.54%and 7.34 CFU/cell,respectively,and the inhibition zone diameter against Escherichia coli and Staphylococcus aureus increased by 1.14 mm and 2.89 mm.
