“蒙”字标乌审草原红牛肉团体标准对比分析研究

摘要 为深入贯彻落实习近平总书记考察内蒙古时提出的“抓好农畜产品精深加工和绿色有机品牌打造”重要指示精神,促进农牧业增值、农牧民增收,高质量建设国家重要农畜产品生产基地,内蒙古围绕自治区优势特色产业,特制定团体标准T/NMSP.MZB02.21—2023《“蒙”字标畜产品认证要求乌审草原红牛肉》,对地域要求、产地环境要求、品种要求、饲料技术、疫病防控、屠宰与分割、质量要求、标识、包装、贮存、运输、追溯及召回等全产业链关键控制环节进行了规定。本文从乌审草原红牛肉产品品质出发,重点研究乌审草原红牛肉理化指标、污染物质量及微生物指标与不同标准的对比情况,从而分析出乌审草原红牛肉的产品特点和质量要求,体现出其作为地理标志产品的特征,同时将树立乌审草原红牛肉的品牌价值,提高产品附加值,为农民增收、农业增效起到积极推动作用。 To follow the important instructions of“focus on the in-depth processing of agricultural and livestock products and the creation of green organic brands”proposed by Secretary General Xi Jinping during his inspection in Inner Mongolia,promote the added value of agriculture and animal husbandry,the increased incomes of farmers and herdsmen,and the high-quality construction of national production base for key agriculture and animal husbandry products,Inner Mongolia has specially developed the association standard T/NMSP.MZB02.21—2023,“Nei Meng Gu Brand”certification requirements of livestock products—Wushen Range Red Cattle Beef,with a focus on advantageous characteristic industries,and specifies key control links throughout the entire industry chain,including geographical requirements,origin environment requirements,variety requirements,feed technology,disease prevention and control,slaughter and segmentation,quality requirements,labeling,packaging,storage,transportation,traceability,and recall.Starting from the quality of Wushen Range Red Cattle Beef,this article focuses on the comparison of its physical and chemical indicators,pollutant quality,and microbial indicators with different standards,in order to analyze the product characteristics and quality requirements of Wushen Range Red Cattle Beef,reflect the characteristics of geographical indication products,and meanwhile establish the brand value of Wushen Range Red Cattle Beef,improve product added value,and play a positive role in promoting farmers’income and agricultural efficiency.
