广东省台山市养殖鳗鱼中重金属含量分析及健康风险评价

摘要 目的:测定养殖鳗鱼中铅、镉、铬、砷、汞和铜等6种重金属的含量,分析其含量分布规律,评价其污染特征及健康风险。方法:以广东省台山市养殖鳗鱼为对象,6种重金属用电感耦合等离子体质谱法测定,无机砷用高效液相色谱-原子荧光法测定,用统计方法分析其含量的差异性、相关性;污染水平用因子污染指数进行评价;重金属健康风险用靶标危险商数评估。结果:样品中铜、砷、汞和镉检出率为100.0%,铬为72.8%,铅为61.3%;铅、镉、汞、砷、铬和铜的平均含量分别为0.036 mg·kg^(-1)、0.009 mg·kg^(-1)、0.070 mg·kg^(-1)、0.348 mg·kg^(-1)、0.064 mg·kg^(-1)和0.401 mg·kg^(-1);各养殖场间重金属含量差异性显著(P<0.05),其污染指数和健康风险指数均小于1。结论:广东台山地区养殖鳗鱼中6种重金属总体含量特征水平较低,污染指数均在正常范围内;人群因食用养殖鳗鱼的健康风险不明显,安全性好。 Objective:To determine the content of Lead,cadmium,chromium,arsenic,mercury and copper in cultured eels,analyze their distribution,and evaluate their pollution characteristics and health risks.Method:Six kinds of heavy metals were determined by inductively coupled plasma mass spectrometry in cultured eels in Taishan city of Guangdong province.Inorganic arsenic was determined by high performance liquid chromatography-atomic fluorescence method.The difference and correlation of its content were analyzed by statistical method.The pollution level was evaluated by factor pollution index.Health risks of heavy metals were assessed by target risk quotient.Result:The detection rate of Cu,As,Hg and Cd was 100.0%,Cr was 72.8%,and Pb was 61.3%.The average contents of Pb,Cd,Hg,As,Cr and Cu were 0.036 mg·kg^(-1),0.009 mg·kg^(-1),0.070 mg·kg^(-1),0.348 mg·kg^(-1),0.064 mg·kg^(-1)and 0.401 mg·kg^(-1).The significant differences in heavy metal content was among different eel farms(P<0.05).The pollution index and the health risk index were less than 1.Conclusion:The overall content characteristics of heavy metals were low and met the national food safety standards.the pollution indexes were within the normal range.The health risk of cultured eel is not obvious,and the food safety is good.
