摘要
食品微生物检测对食品安全管理非常重要,目前仍以传统检验技术为主,而新技术也不断迅猛发展并得到了广泛应用。本文综述了分子生物学检测技术、免疫检测技术、代谢检测技术、光谱质谱检测技术及其他仪器检测技术等食品微生物检验新技术的研究及应用状况,展望了食品微生物检验新技术未来的发展方向,为保障食品安全提供了理论基础。
Food microbiological Inspection is important in food safety management.New technology has developed rapidly and been applied widely while at present the traditional inspection technology still covers mainly.This article analyzed the specialties and application of the new technology in food microbiological inspection including molecular biology testing,immunome testing,metabolism testing,spectrums testing and the other mechanician testing,while prospected the futural development directions,provided the theriacal bases for food safety management.
