摘要
针对现代饮食中膳食纤维缺乏的问题,提出一种功能性膳食纤维的制备。试验首先对膳食纤维的处理条件进行优化,然后对膳食纤维的理化性能进行研究。试验结果表明,在蒸汽爆破蒸汽压力为0.6 MPa,维压时间为300 s的条件下,经过高能纳米球磨机超微粉碎处理的膳食纤维SDF含量最高,为9.86%,对葡萄糖吸附量约为2.55 mg/g。对糖尿病小鼠进行灌胃处理后,小鼠血糖较灌胃前降低了6.5%,血清中的血脂浓度也明显降低。这就说明制备的膳食纤维表现出良好的降血脂血糖作用,可以有效延缓和降低餐后血糖和维持餐后血糖的平衡和稳定,对未来预防肥胖有积极作用。
Aiming at the serious problem of dietary fiber deficiency in modern diets,a preparation method of functional dietary fiber was proposed.The experiment first optimized the processing conditions of dietary fiber,and then studied the physical and chemical properties of dietary fiber.The experimental results showed that under the conditions of steam explosion steam pressure of 0.6 MPa and pressure maintaining time of 300 s,the highest SDF content of dietary fiber treated by high-energy nano ball mill was 9.86%,and the adsorption capacity of glucose was about 2.55 mg/g.After intragastric administration of diabetes mice,the blood sugar of the mice was reduced by 6.5%compared with that before intragastric administration,and the serum lipid concentration was also significantly reduced.It shows that the prepared dietary fiber has a good effect of lowering blood lipids and blood glucose,which can effectively delay and reduce postprandial blood glucose and maintain the balance and stability of postprandial blood glucose,and has a positive role in the control of diabetes.
