摘要
厨房油烟问题是国人生活中最大的健康隐患之一,做饭时,厨房内PM2.5平均浓度会升高几十倍甚至几百倍,长期吸入油烟还会诱发肺脏组织癌变,危害身心健康。凹面电磁灶作为国人使用较多的厨具,其产生油烟的原因之一就是烹饪过程中厨具局部温度超过了食用油的裂解、挥发温度,中低端家用凹面电磁灶产品普遍存在加热不均匀问题,而目前国内尚无凹面电磁灶加热均匀性的评定方法,本项目通过设计并定制测试工装,通过对凹面电磁灶正常工作中不同位置温度的实时检测,结合科学的计算方法研究凹面电磁灶的加热均匀性,并制定一种凹面电磁灶加热均匀性测试的评定方法。
The problem of kitchen oil fume is one of the biggest health hazards in Chinese life.When cooking,the average concentration of PM2.5 in the kitchen can increase by tens or even hundreds of times.Long term inhalation of oil fume can also induce lung tissue cancer,posing a threat to physical and mental health.As a commonly used kitchen appliance by Chinese people,one of the reasons for the generation of oil fumes is that the local temperature of the kitchen appliance exceeds the cracking and volatilization temperature of edible oil during the cooking process.Low and mediumsized household concave electromagnetic stove products generally have uneven heating problems.Currently,there is no evaluation method for the heating uniformity of concave electromagnetic stoves in China.This project designs and customizes testing fixtures,Real time detection of temperature at different positions during normal operation of concave electromagnetic stoves using reliable testing methods,combined with scientific calculation methods to study the heating uniformity of concave electromagnetic stoves,and develop a feasible qualified evaluation method for heating uniformity of concave electromagnetic stoves.
