枇杷叶提取物与壳聚糖复合膜的制备、表征及其在香蕉保鲜中的应用

Preparation and Characterization of Loquat Leaf Extract and Chitosan Composite Film and Its Application in Banana Preservation

摘要 以壳聚糖溶液为原料,添加枇杷叶提取物制备可食性复合薄膜,并将其应用于香蕉保鲜。首先以黄酮含量为评价指标,利用单因素试验和正交试验得到富含黄酮的枇杷叶提取物的最佳工艺条件为料液比1:15、提取温度70℃、提取时间30 min、乙醇浓度50%。随后以DPPH自由基清除能力为评价指标,利用单因素试验和正交试验得到最佳的成膜工艺条件为壳聚糖溶液浓度1.2%、冰乙酸浓度1%、枇杷叶提取液添加量12%、甘油添加量0.75%。复合膜的性能表征结果表明,相比于壳聚糖单膜,复合膜具有更小的厚度和密度、更好的阻油性和更高的DPPH自由基的清除能力。最后,将该复合膜应用于香蕉保鲜,通过失重率、色差、可滴定酸等指标监测了贮藏期间香蕉的品质变化,证实了该复合膜在香蕉保鲜上的可行性。研究结果可为枇杷叶提取物与壳聚糖复合膜的开发和应用提供理论参考。 Edible composite films for banana preservation were prepared by adding loquat leaf extract and chitosan solution.First,using the flavonoid content as an indicator,single factor experiment and orthogonal experiment were performed to obtain optimal extraction conditions of flavonoid-rich loquat leaf extract as follows:material liquid ratio was 1:15,extraction temperature was 70℃,extraction time was 30 min and ethanol concentration was 50%.Subsequently,using the DPPH free radical scavenging ability as an indicator,single factor experiments and orthogonal experiments were conducted to obtain optimal film-forming conditions as following:chitosan solution concentration,acetic acid concentration,loquat leaf extract,and glycerol were 1.2%,1%,12%and 0.75%,respectively.The properties of the composite film were characterized.The composite film had a smaller thickness and density,better oil resistance ability and higher DPPH free radical scavenging ability compared with the chitosan film.Finally,the composite film was applied to banana preservation,and quality changes of bananas during storage were monitored by weight loss rate,color difference,titratable acid and other indicators,which confirmed the feasibility of composite film in banana preservation.This work could provide a theoretical basis for the development and application of chitosan-based food composite film incorporated with loquat leaf extract.
